The resident café at Surrey Docks Farm in Rotherhithe, Piccalilli Caff serves up a menu with hints of Italy, freshly made from local produce. Its daytime opening hours makes it an ideal brunch or afternoon tea spot in a rustic ‘caff’ setting. Piccalilli Caff was already an avid composter of food trimmings. FoodSave opened Piccalilli’s eyes to the cooked food that was being wasted.

The FoodSave team monitored kitchen waste using the Winnow Waste Monitor System for four weeks. During the audit all food waste was measured including inventory spoilage, preparation waste and plate waste. The system required minimal time and caused no disruption to service. The FoodSave team met with Piccalilli Caff weekly to review the results and identify actions for waste reduction.

Café Heath on Mare Street in Hackney is a cafe and takeaway specialising in Caribbean cuisine ‘cooked with love, fresh daily’. The FoodSave programme proved to be “a real eye-opener.
